Olivia, I too can't survive with just one piece of fruit without feeling "yucky." So I've been having some fruit juice or V8, plus a pear and half a grapefruit. I guess I should probably explain that "Etouffe" translated into English is "Smothered," so this is a recipe for Smothered Chicken!
