Did we ever get a definitive answer to the baked potato question?

YES!! baked potatoes are a GO on LDL as long as they are topped with all the approved LDL toppings!!!!

YAY!!!!! I looked for one of thos T-Fal Actifry gadgets... They cost over $250.00  :wrong: .  I guess I am going to have to wait to get one  :'(

In the meantime you can oven fry the potatoes just as you do the butternut squash fries.

The new inventions are always pricey when they first come out.
In a few months you may be able to get it for a bargain at Walmart.

we can have potatoes, baked and in the oven - does it mean i can use them in stews-soups too?

Renee ---  I think what they have decided is that something happens to potatoes when reheated that cause something to break down too much which isn't good.  Anyway, you wouldn't want to put it in a stew or soup unless you eat it all and don't reheat it.  They have said that you could do a potato salad with cooked potatoes, that wouldn't be reheated.

i read some of the questions; i am not seeing anything that says reheating turns the potatoes to sugar when eaten
the only i think see about reheating is  "Do I lose nutrients if I cook, store and reheat potatoes?"

I don't do the potato thing myself, but I think this is what they were discussing at some point during RT's personal research on what eating potatoes would do to him.  It had to do with resistant starch and according to what I found online, it is what happens when potatoes are eaten cold.  Here is what I found:


Resistant Starch

The central benefit of eating cold cooked potatoes is in resistant starch (RS). A tasteless form of fiber, RS aids in weight loss due to its slow absorption rate in the small intestine. This causes most of the dietary bulk of RS to pass as excrement. When potatoes are cooked, then cooled, resistant starch forms tight crystals. These crystals are broken up when the potato is reheated. This slow absorption also gives you the feeling of satiety for a longer period, reducing food intake.


A 2004 "Nutrition and Metabolism" study showed an increase in fat oxidation from eating the RS meal. It was further shown that the oxidation is sustained by a daily diet containing RS, suggesting that a diet including high RS foods may help you manage your weight.

Okay now I'm completely confused.  I thought that Roger said do not eat them after they are cold.
