What are you planning for Thanksgiving?
I am looking at this menu for mine:
1 Soup
"Pumpkin Soup in the Crockpot" or
"Curried Pumpkin & Sweetcorn Soup"
2 Salads
"Romaine Lettuce w/Apples and Raisins"
"Tomato, Cucumber & Green Onion"
2 Main Dishes
"Maple Mustard Veal Chops w/Carmelized Apples"
"turkey dressing" (w/turkey breast baked in it)
& "Chicken or Turkey Gravy"
3 Side Dishes
"LDL "Sweet Potatoes" "
english pea salad (listed under: "need recipe")
(still trying to figure out how to make a green bean casserole - LDL)

"Jim's Pumpkin Pie...Crustless"
" 'Banana Pudding' "
Drinks
"Hot Mulled Apple Cider"
iced tea sweetened with Stevia

This sounds great. wish i could join you. Not sure just what i'm doing. we have to eat very early (1:00) as my daughter has to leave for work. I am working the evening before (7am -7:30pm) This doesn't leave much time to prepare the night before. But i'm sure it will all work out...it always does. Have a great day. Carol

Hi Enjae...about that green bean casserole...Don't know how much experimentation you're up to, but in getting a few ideas from the Veg Source boards, you might be able to make a substitute for that cream of mushroom soup by making a little white sauce with some Earth Balance (or whatever you use) and some corn starch and some UNsweetened soy milk and then toss in some chopped sauteed mushrooms and season it to your liking. Your topping could be some of the shredded veggie cheese with just some sauteed onion pieces instead of the canned fried onion rings, or saute up some onion rings until nice and brown. (I don't remember how the layers alternate as it's been moons since I've made this.) Or if this doesn't appeal, maybe it will give you some incentive to do your own thing! Good luck! ....nyKath

Let me tell you both, I have been experimenting big time with this. LOL It was my favorite holiday food. So far, I tried white beans with a tbsp. of low fat mayo with sauteed mushrooms and crushed up popcorn for topping. I have to say it was less than wonderful. I am definately going to try your idea nyKath. I think maybe some evaporated fat free milk with some corn starch might do the trick. If it doesn't, I am going to just eat some green beans with sauteed mushrooms and onions (in olive oil of course).

First my buddy Chet and I get up at about 0-dark-30, stuff the bird and shove it into the oven by 7:00 AM. Chet was a civilian working for the Air Force when I was stationed in Germany. I spent all of my Thanksgivings with his family back then and now he spends them with us.
Next we all go out for breakfast.
After we get home we put on the Macy's Parade.
Around noon, hordes of in-laws and friends bearing turnip puffs, sweet potatoes, salads, wines, chocolates and pies of pumpkin, mince and cherry start to arrive. (not very LDL, but alas, not everybody is).
Weather permitting, we will set the table on the back patio.
At around 1:00 PM my father-in-law will stand at the head of the table and say the blessing.
By 1:05 PM the three days of preparation we've endured is reduced to leftovers.
About 3:00 we watch Laurel and Hardy's "March of the Wooden Soldiers" Stan Laurel's greatest movie entrance ever!
Around 4:30, I take Chet to the train station.
Around 7:00 the dishwasher has finished it's last load, the tables and chairs are put away, the in-laws are gone.
7:01 PM, my son walks into the room and says "what's for dinner"?

My mom always said: "Wha'?!"... "We ate enough ALREADY!"
The only problem was I was a skinny little critter with stomach trouble; I couldn't eat enough at one sitting to make one meal last all day. (Boy, that changed!)

It's a mixture of cooked turnips, soft bread crumbs, butter, sugar, salt, pepper and eggs that are tossed into a greased casserole (pan) and baked in a hot oven.
Not very LDL friendly in this present form but my in-laws really like it. I personally find it rather bland, but you put enough turkey gravy on it and I'll manage to get it down. Now that I do LDL, I have the perfect excuse to pass on it (he...he...he).
