mary..these recipes all look great...thanks for taking the time to write out all that info about parsnips...i have never knowingly eaten a parsnip in my whole life...so now when i see them in season,i'll know EXACTLY what to do with them......................niki

all I can say to that is 'yum'! Thanks, Mary. It's actually quite like the parsnip soup I make, except that I use a tablespoonful of curry powder instead of the ginger. For a creamy version, which I love, I sometimes thin it with some soy milk (unsweetened type, of course).
