Creamy Broccoli Bean Soup
1 head broccoli - steam and set aside
Sautee:
2 T. EVOO
1 onion
2 cloves garlic
Add broccoli to sauteed onion & garlic
Add:
1 can cannellini beans (I used great northern beans)
2 1/2 c. chicken stock
salt & pepper to taste
1/2 c. parmasean cheese (I omitted this, but added a small amount to my bowl)
Use immersion blender to blend it all together. I made this today and it was good. I found it yesterday in a whole foods magazine at the eye doctor's office.

Roger, I have never been able to find the ff parm cheese. Every place I have ever looked for it only has the regular. If you or anyone else knows of a good place to find it please let me know. Also, I made this soup without the parm cheese and I sprinkled a little bit of regular parm cheese on one bowl and ate it, but I really liked the soup better without the parm cheese, so I was glad I didn't add it to the whole pot.
