I made this today and it is really good. I love to make bean soups because they are so good and filling (so much more so than just veggie soups). I found this in one of my books today:
Asian Black Bean Soup
2 t. evoo
1 c. chopped onion
2 t. chopped garlic
1 c. chicken broth
2 cans black beans (or 3 cups beans) - (I only had 1 can of black beans, so I also used 1 can red beans also)
2 T. low sodium soy sauce
1/8 t. crushed red pepper flakes (I just used a bit of cayenne pepper)
1/8 t. coriander
1-2 T. orange juice (I used 1 tablespoon)
2 scallions, chopped
Sautee onions and garlic in oil. I add garlic towards the last of sauteeing, so as not to burn the garlic (as it burns easily).
Add the other ingredients, except the scallions and bring to boil. Use immersion blender to puree, but don't puree totally, leave some of the beans partially intact. Top with scallions just before serving. I just threw the scallion into the pot after I took it off the heat. Hope you like it. It's really good.
