Kombu-Squash Soup

This is an autumn-winter detox diet soup recipe that provides good alkalinity to your cleansing program....CQ

Ingredients:

6 cups of water
4 cups of chopped butternut squash
1 8-inch piece kombu
1 tablespoon of extra virgin olive oil
1 large onion, chopped
4 cloves of garlic, chopped and minced
1 two inches long ginger, peeled and chopped
¼ cup balsamic vinegar
Himalayan salt

Directions:

Boil water in pot, make sure it's large enough to contain the amount of water. Add squash and kombu then cook for 20 minutes on medium heat. Remove squash and peel away the skin. Throw away the skin and add the peeled squash back into pot.

Heat olive oil in a saute pan on medium heat. Add the onion, garlic, and ginger and sauté for 10 minutes. Add sauteed vegetables to squash mix and cook for 1 hour until squash is tender.

Add balsamic vinegar and salt before serving

What is kombu?  I don't think I've ever seen that.

It's a seaweed that you can find at a health food store. It's great to add to soups to help with the gas issues. Some people don't notice a difference but I have while using it. I really don't know what I'm doing differently.

P.S. By the way, this soup is great for anyone that has hypothyroidism.

Can you use the already diced Butternut squash?
If so measure the 6 cups?
Same amount of water???
