Cabbage Patch Stew

Post by Charlotte C. »

Just want to share this recipe with everyone. I made this yesterday and will be having it for my lunch for the next few days. Along with a little butterbean salad as a side dish. It is soooooo good. I love this stew. *love* Hope everyone enjoys it as much as I do.

                                                                                                                                                            Charlotte
          CABBAGE PATCH STEW

1lb. Extra lean ground beef
1lb. Ground white turkey
4 celery ribs, chopped
1 medium onion, chopped

7 cups chopped cabbage
2 cans 16oz kidney beans, rinsed and drained
1 can 28 ounces dieced tomatoes
4 cups beef broth
1 can 15 ounce tomato sauce
2 medium carrots, sliced
½  teaspoon splenda
salt and pepper to taste

In a large saucepan or Dutch oven, cook the beef , turkey, celery,
and onion over medium heat until meat is no longer pink.
Add the remaining ingredients; bring to a boil.
Reduce heat; cover and simmer until cabbage and carrots are tender.
                                                                                  ENJOY

I made this stew and would highly recommend it.  It is so filling that I could only eat one big bowl.  But, it makes a hugh batch -- enough to freeze for many more meals.  But because I love cabbage I would probably add even more the next time I make it.

Your right VickiLynn it is really filling, and it does make a lot. I'm the only one on LDL in my house hold so I eat on it for a long time. I checking on another recipe that includes cabbage, but it also calls for red potatoes so I waiting to see what Rodger says about it first. I could leave the potatoes out but I really am hopeing to be able to put them in.          Charlotte

I believe boiled potatoes are OK too. Trouble is, they don't freeze well.
This would be delish over baked or boiled potatoes though.
