Coconut Chicken Stew

Coconut Chicken Stew:

It's sooooo simple, and can be tweaked however you'd like. I increase the chicken and liquid amounts usually, so that I have more soup to last throughout the week.

This is a crockpot recipe, so just add these to the pot as you go:
4 chicken breasts
2 cans white beans of choice (drained and rinsed)
1 can light coconut milk
1 can chicken broth
1 can diced tomatoes
2 Tbl Italian seasoning
1 Tbl Basil (seems redundant, but it works)
2 Tbl Garlic salt (I usually replace with garlic powder and a little salt)
1 clove garlic
Salt & pepper to taste
I like to add red pepper flakes, to taste

Put all your ingredients in the crockpot, cook on High for 9 hours. Shred the chicken in the pot before serving. After 9 hours, it almost shreds itself. Super flavorful and filling!

Just printed this off! My son has oral surgery tomorrow. I may put this in the crockpot before I go(if I have time). Thanks!

Ali, I didn't make this soup that day; but, the next one. It was delicious!! I had 1 small bowl left and I put it in the freezer for a day when I don't want to cook. I only put in 2 very large chicken breasts and it was more than enough. Actually, I think I may add another can of beans next time. Thanks for sharing the recipe!
