Enchilada Soup

Just found this recipe in my slow cooker cookbook..(I have not tried this recipe..just sounds good)

1lb. ground sirlion
1(15oz.) can Mexican tomatoes
1(15oz.) can pinto beans, liquid drained
1(15oz.) can whole kernel corn,drained
1 onion chopped
2(10oz.) enchilada sauce
1(8oz.) pk. 4-cheese blend ( Not LDL..Use FF cheese..or not)

Spray 5-6qt. slow cooker
combine beef,tomatoes,beans,corn,onion,enchilada sauce and 1 cup water and mix well
cover and cook LOW 6-8 hrs.  or High 3-4 hrs.
top each bowl w/FF cheese or not

:)  Sorry I should have put Mexican Style..check out DelMonte tomatoes they should have it..If not probably could use DelMonte Zesty Chili Style...Hope this helps...

Be careful with these "flavored" Tomatoes.
Even the Italian Tomatoes have HFCS

The Fire Roasted Tomatoes and add your own spices may be a better choice

Mexican Recipe Stewed Tomatoes

Olé! These stewed tomatoes are a great way to add a kick to your Mexican recipes.
No artificial colors or preservatives – just our finest tomatoes, seasoned with jalapeno peppers, garlic and onion.

Sizes Available: 14.5 oz. , 28 oz.

Ingredients: Tomatoes, Tomato Juice, High Fructose Corn Syrup, Jalapeno Peppers, Salt, Acetic Acid, Vegetables (Onions, Green Bell Pepper, Celery), Garlic Powder, Citric Acid, Spices, Calcium Chloride.

Thanks Linda..I just checked the chili style and they do have hfcs too...and oh how i love them...well note to self check tomatoes labels closer... :sad: :sad: :sad:

The Organic Fire Roasted Tomatoes are good.
Just check the labels

Oh, this does look good! I only have 1 can of enchilada sauce in my pantry. So, I guess I need to make a grocery run first!  ;)

A young man, who was a total stranger to me, struck up a conversation with me at Walmart last week while we were both looking at barbeque sauces. We were talking about how HFCS is in EVERYTHING!! I'm glad to see that the younger generation are also aware of sugar versus HFCS! I don't want to get on my soapbox about HFCS; but, I am not happy at the number of products that contain it!  *grrr*

Before LDL hubby and I lost 10-15 lbs just eliminating HFCS and MSG
These are in so many foods that there was not much left to eat!
