Have not tried this..just sounded good
1/4c evoo
2 cloves garlic, chopped
2 cans chickpeas, drained
1 sm. onion, chopped
2t ground cumin
1/2t ground cardamon
1/2t turmeric
salt and pepper to taste
2c veg. or chicken broth
1(28.oz) fire roasted tomatoes
1) heat a med. pot w/evoo on med. heat
2) add garlic and cook 2-3 min.
3) blend chickpeas and onion in food processor or blender
4) add beans and onion puree to pot and cook 5 min.
5) season chickpeas with, cumin,cardamon,turmeric,salt and pepper
6) stir in broth,then tomatoes
7) simmer soup for 5-10 min. to combine flavors
optional: you could blend broth and tomatoes...then add to pureed chickpeas and seasonings..or not
