Made this the other night and it was good. I got it from my new Taste of Home magazine. I used chicken instead of turkey.
TUSCAN TURKEY SOUP
2 T. EVOO (or less)
1 c. chopped onion
1 c. chopped celery
2 cloves garlic
2 cans chicken broth
1 can pumpkin
1 can of white beans
2 c. turkey, cooked and cubed,
1/2 t. salt
1/2 t. dry basil
1/4 t. pepper
grated parmesan cheese, for garnish (I omitted)
Sautee onion and celery in oil until translucent. Add garlic and cook additional 1 minute. Add other ingredients, except parmesan cheese, and bring to boil and simmer.
Makes a nice golden soup, because of the pumpkin.

Sounds good, I will try it since I have all the ingredients. You can't beat the recipes from this site because they come from people who enjoy good food. Livin' da life!!
