Taco Soup Time!

Taco Soup Time!
Its soup time and was going to make my Fav Taco Soup.
I was unable to find the seasoning recipe (since I realized I had no packets of taco seasoning at home).
so with my newly restored computer, I dug into my saved recipes and decided to post both
TACO SOUP
1 lb. ground turkey or lowest fat ground beef (I use ground buffalo)
2 med. onions - chopped
1 pkg. dry taco seasoning mix (No MSG)
1 pkg dry ranch dressing (optional)
In skillet, combine the above ingredients.
Cook and brown meat, stirring frequently.
Add all of the following ingredients.
1 - 15 oz. can pinto beans (or 2 small cans)
1 - 15 oz. can black beans
1 or 2 cans Chick Peas
1 can Navy Beans, great northern or canellini
* Drain and rise beans until foaming clears.
1 - 11 oz. can vacuum packed corn niblets
1 - 15 oz. can diced tomatoes
1 – can mild Rotel Tomatoes and Green Chiles
1 qt Beef Broth (without MSG). Substitute another can of diced tomatoes if broth not available.
Several chopped seeded Jalepenos
Chopped red, yellow, orange peppers for color and taste
Bring to a boil and lower heat to keep low boil. Cook about 15-20 minutes - stirring often.
Garnish with shredded cheese if desired

You can make your own Taco Seasoning
1 TBSP Chili Powder
1/4 tsp Onion Powder
1 1/2 tsp Ground Cumin
1 tsp Black Pepper
1/4 tsp Garlic powder
1/4 tsp Crushed Red Pepper Flakes
1/2 tsp Paprika
1 tsp Sea Salt
Mix and Store in tight container

Thanks for posting this Linda! I'm making a big pot of chili tomorrow! Taco soup and Little Mary's tomato soup are definitely on the menu this winter.

I just made a pot of Taco Soup. It is simmering on the stove and it loks and smells wonderful! I don't care if it is summer time, I love soup! Thank you for the great recipe Linda. I had a hard time deciding whether to make Taco or Pizza soup today. But I bought ingredints for both, so Pizza Soup is next

I always used pizza soup as a sauce over spaghetti squash. I would add chunks of onion and peppers and some mushrooms.

I got back from Alaska at 2pm Wednesday left on 6/27 at 1140 pm our time. It was a long flight and my daughter and I were separated on the flight to and from Alaska. I was looking forward to visiting on the plane!! At least we enjoyed each others company at the layover spots in Dallas and Phoenix. I had a good time and did a lot of cooking. We had oatmeal and toppings for breakfast several days. kid made sandwiches whenever they were hungry. The guys went fishing in the Russian River and we had salmon on the BBQ. It was so good.Next trip is to Monterey, Calif. I will have a better idea of what to make. We will have taco soup one nite. ll be in September. Hot pumpkin smoothie time as well! I only gained 5 lbs and lost 2 already. I got my kids hooked on chopped salad!! Life is very good. My granddaughter in Calif. is moving to Iowa after the wedding in September. Most of us are flying out together. I had my trip extended week to visit with Samantha, but she is moving to Des Moines so I will stay with Julie and David. I will have a chance to visit with my grandkids while they honeymoon for a few days. In the meanwhile Sam and baby Aedon can stay at my place and use my car. Life is good.
