(Makes 4 servings)
1 zucchini, halved and cubed
1 Tablespoon olive oil
1 can (15.5 oz.) cannelloni beans, drained and rinsed
1 can (14.5 oz.) diced tomatoes with green chilies
Chili powder to taste
Directions:
In a skillet over high heat, cook zucchini in oil for 3 minutes. Stir in chili powder, beans and tomatoes.
Bring to a boil; cover and simmer 10 minutes, or until tender.
