MEXICAN CORN BEAN SOUP RECIPE

MEXICAN CORN BEAN SOUP RECIPE
This is a recipe from one of my favorite Bellingham restaurants, the Colophon Cafe.
1 medium onion, diced
3 cloves garlic, minced
1 can (15 oz) diced tomatoes
2 cans (15 oz each) red kidney beans, drained
1 can (24 oz) vegetable juice (like V8)
3 teaspoons chili powder
small dash stevia (originally 1 teaspoon sugar)
1 teaspoon cumin
1/2 teaspoon black pepper
1 pound frozen corn (or canned)
salt to taste
In a large stock pot, saute onion and garlic in olive oil.
Add the tomatoes, kidney beans and vegetable juice.
In a small bowl, combine the chili powder, stevia, cumin and pepper.
Add hot water to the mixture until it is paste-like. Add to soup.
Add corn.
Simmer for 1 to 2 hours, stirring occasionally.
Serve with Corn Crisps or Wasa crackers.
Serves 6-8

Is this a liquidy soup or more of a thick chili type? Just curious cuz it doesn't look like there's much liquid. (and when I make it I want to be sure how it's suppose to turn out!!!) Thanks

It's medium - not really thick. If it becomes thick, just add more water.

Today I am making your recipe corn bean soup. I am beginning to pack to move and this is a recipe I can put in crockpot and simmer. I did add ground beef too. Years ago when I went to the food bank for help they often gave us this soup in a container.It was so good and I forgot about it. So today it is cooking and soon we will eat it. Yum. Thanks for the recipe I will let you know how it turns out.

this is so good! Ralphie and i ate it the way it is and Mike who is not on ldl had it with rice. He has to have everything with rice and he is nice and slim. So every one try this recipe I'm sure you will enjoy.

Hey Book Guy, are you the one that couldn't find Corn Thins? If I recall someone got them from Amazon??? If that was you, do you like them and were they fresh, etc? I can't find them around my end of the country either. I also can't find the Fat Free Rye Krisp. Now that the fresh melons and tomatoes are ending I need to find new snack stuff.

I buy corn thins from Amazon........they have always been fresh.....you get an unopened case. The only problem is Amzon keeping them in stock........be sure to order next case before you run out.
