Chicken & Wild Rice Crockpot Soup

With cooler weather coming, I thought I would share one of the soup recipes I came up with. I make this occasionally on cold days, and our family enjoys it.

3 skinless, boneless chicken breasts
1 quart organic 99% fat free chicken stock
2 cups frozen corn
1 tbsp. minced garlic
1 med. sweet onion
3 stalks celery
1 cup long-grain wild rice, rinsed
2 cups fresh baby carrots
1 tsp. liquid smoke
Fresh ground pepper
1 tsp. poultry seasoning

Add all ingredients to crock pot. Set on low for 6-8 hours, or high 3-4 hours. Stir occasionally, and add extra water if needed.

As the soup cooks, you can break apart the chicken into nice bite sized pieces with your stirring spoon.  (:

P.S. Does anyone else have some great crockpot recipes? I use mine quite often in the winter!

Hi Tori,
      Since it is a snowy day I decided to make your chicken soup. I did use canned wild rice ,1 garlic clove  and a piece of fresh ginger. It smells so good.I know we will love it. I hope there is leftovers for tomorrow.

I made this soup yesterday. My husband loved it and wanted some for his lunch today. It's quite a complement for family members to return for second helpings. I definitely had two bowls. Loved it. Thanks!
