Multi-Bean Soup

Ok, I got brave tonight and decided to quick soak some beans and make my own soup. Hope you like it (I'll be trying it soon as it's smelling yummy!)

Pink beans, black beans, baby lima beans, pinto beans, garbanzo beans

I poured a little of each into my measuring cup and ended up w/ about 3 cups of mixed beans.

soak overnight or do the quick soak (follow package instructions)
Drain, rinse and then cook x 1-1 1/2 hour more. Drain and rinse again.

Now add chopped green onion and chives
crushed red pepper
chopped green bell pepper
salt and pepper to taste
chopped garlic
can of puree tomato (large can....approx 28 oz)
frozen corn
1 can chicken broth

Add the above mixture to the beans and simmer 20-30 minutes or until bell pepper soft
Serve and enjoy!!
( I just tasted and is yummy!!!!)

G'morning...

so how did it your multibean soup taste?  i STILL haven't mixed my beans up.  Just can't seem to make myself do it?  Black beans with limas?  Good gracious...after all these years i see that i am a die hard segregationist!!  >:( (of beans, that is!!  ;D)

Hey Guys! Had the soup for lunch today...was only able to eat about 1/2 of my 2# margerine bowl full. Some bites were spicy and some weren't. But overall was DEEELIIICCCIIIOOOUSS!
