Greek Butter Bean Soup

1/2 pound dried Butterbeans
1 Onion, chopped
1 Celerystalk incl.the greens,chopped
2 Carrots, chopped
6 TBS Olive Oil
1 Tbs. Tomato paste
1 piece Savory
2 Tbs, Parsley, chopped
Salt & Pepper

This white bean soup is a Greek national dish..i am new to LDL but i think it this recipe will work out just fine...

Rinse the dried beans with cold water and let them sit over night in water.
Cook the beans in about 5 cups unsalted water for about 1,5-2 hrs. Removing the foam often.

After 1 hr cooking time heat up the oliveoil in a pan and saute the onion.
Followed by the chopped celery incl.the greens, carrots and keep frying it a bit.
Pour the vegetables incl.the oil into the the beansoup.
Mix up the tomatopaste with a little water and pour in in the soup also.
Mix in the parsley and put the savory on top.

After the beans are soft, remove the savory and put in salt and pepper to taste.

Hi little Mary.
actually i am German but i got hooked on Greek food since my first trip to Greece.
I got this recipe from a Greek friend.
I really hope u like it...
