made this soup up for lunch today. really is yummy...
2 boneless skinless chicken breasts (cut in small pieces)
1/2 large onion diced
2 TBS olive oil
1-14.5oz. can fat free chicken broth
1-15.5oz. can Large California Butter Beans (Limas) UNdrained
1-15.5 oz can pinto beans Drained
1-4oz can mushroom pieces Drained
1/2 - 15.5 oz. can sliced carrots Drained and diced (save the other half for lunch tomorrow!)
1 chicken boullion cube
1/2 tsp. poultry seasoning
SEASONINGS: AMTS. VARY SO U CAN ADJUST TO TASTE
1/2 - 1 tsp. each of: pepper, garlic powder, onion powder, dried thyme leaves, and 1/4 to 1/2 tsp ground cloves (these really make the soup!!) taste before adding any salt. i found mine was fine without any.
season chicken (just sprinkle a litte garlic powder, salt, pepper and dried thyme leaves). Heat oil in dutch oven or soup pot. when hot, add seasoned chicken and onion. saute until chicken is brown and onion begins to caramelize. (keep the heat med. to high) add the rest of the ingredients including the seasonings. simmer for 15-20 min. turn off burner and let sit until the boil stops. may take 10 min or so. I thought this was delicious! hope u like it too!!
