Refried Bean Soup

I found this recipe in A Taste of Home magazine.  I usually double the batch when I make it.  My whole family enjoys it.  I hope you do, too!

Refried Bean Soup

Ingredients:
1 can (16 oz.) fat free refried beans
1 can corn - drained
1 can black beans - drained
1 can chicken broth
1 can spicy diced tomatoes
1/2 cup water
1 can green chilies
1/4 cup salsa

Combine all ingredients and bring to a boil.  Reduce heat and simmer for about 15 minutes.  

This soup is spicy and the refried beans gives it a thicker consistency.  It's great topped with a little bit of ff cheese and served with corn thins!

Thanks Country Girl...can hardly wait to try this recipe sounds sooo good!

I make a SUPER FAST CREAMY version of this soup...not as spicy but very delicious as well...

1 can fat free refried beans
2 c. organic chicken broth
PUT IN A SAUCE PAN...HEAT...if too thick, add a little water...

Country Girl,

I made your soup recipe for the first time yesterday because I wanted a quick, easy one to make.  I can't thank you enough for posting this -- it fit the bill and was soooooooo good!  I'm going to double the recipe next time because me and my husband polished off almost all of it in one sitting ;D .

I also made the Refried bean soup yesterday...And I did make a double batch, so I ate a small bowl and froze the rest, so I will have something to eat after I start back to work, If I get the job.  I am trying to go back to work so I can get health Insurance.  I have not had health Insurance from Sept 2006, until now.  But I feel better then I have in years.  Back to the soup, it is a very good soup, and I will make it again.

What brand of salsa is everyone using that doesn't have any sugar added?

Mary J,

I use Tostitos All Natural Chunky Salsa Medium, which has a good kick but not too hot.  If you want spicer use the Hot one.  They also make a mild.

Mary J I use the Pace chunky salsa medium, but I think next time I will use the hot.

You're all very welcome for the recipe!  I love this soup, too.  It does freeze very well and is so easy to make.  You can always throw in some chicken when you want it for the protein meal.  I'm so thankful for all of the great recipes on this site.  What a way to eat!!
