I wanted to make Sicilian Mama's Rags Soup because of all the raves it has been getting.  I couldn't find it here in the soup recipes so after searching and searching on the LDL boards I finally found it.  I have added it here for all to enjoy!

Just thought I'd share this quick and simple recipe...

It's my own version... but you can add or take away what you like...

2 quarts fat free chicken stock or veggie stock (make your own and save tons of sodium)

2 cups snipped green onions

1 large handful fresh or 1/2 bag frozen spinach (optional)

6 egg whites or 3 eggs (I use egg whites only to save on the cholesterol and calories) beaten well.

Boil the stock, onions and spinach until boiling

Gradually whisk in the beaten eggs and whisk the soup until the eggs turn into "rags"... serve and enjoy!!!

My kids LOVE this soup... I hope you will too...

This is almost the same soup as egg drop soup I bet it is good with the spinach,,I will have to try it.
