Black Bean Soup

Post by leisuregranny »

I am waiting for my book to arrive, but in the meantime I made a Mexican Black Bean Soup today.  This was one of my Weight Watcher's recipes.  Can anyone tell me if the ingredients, listed below, are legal on LDL?

1 tsp.olive oil
1 med. onion, chopped
1 sm. red bell pepper, seeded and chopped
2 garlic cloves, minced
2 tsp. ancho chili powder
1&1/2 tsp ground cumin
1 (14 oz.) can fat free chicken broth
1 cup frozen corn kernels
1 (15.5 oz.) cans black beans (rinsed)
1 cup water
4 tsp red wine vinegar
1/2 c, shredded reduced fat Mexican Cheese blend (optional)

This is a really good soup and very filling, and very easy. I usually serve it with homemade pico de gayo (?spelling)and a dollup of fat free sour cream.  Thanks for your help.

I would be happy to post instructions if anyone is interested.

Blessings,
Sylvia

Looks good to me, but it's better to have one of the food "police" check it out to make sure.  They have been on program a lot longer and with lots of success.  I'm a relative newcomer (started January 11th).

The ingredients are fine but would avoid the cheese and sour cream until you've lost OR definitely not have it that often.

I love Cuban/Mexican food and I find it very hard to only have cheese/sour cream every now and then...so I don't use it on my soups.

I also believe once you try the recipe in the book you'll probably perfer that version. I have a few recipes that call for red wine vinegar and I prefer the one in the book.

Thanks, everyone, for the heads up.  I'll wait for my book to arrive (on Monday) and check out all the recipes.

Blessings to you.
