V8 Soup

I have been following these boards for almost a year now and have found some wonderful recipes here, but this is the one soup I make every week and use as a great standby. It reheats as well as it tastes fresh cooked:

1 cup diced baby carrots
1 cup diced celery
1 large yellow onion diced
1/2 Green Pepper seeded and diced

Cook the above in 2tbs Olive Oil till carrots tender
then add
1 46oz V8 Vegetable Juice (I prefer the spicy Hot)
1 28oz can diced tomatoes (or 2 cups fresh tomatoes diced)
1 can Black Beans (drained)
1 can Pinto Beans (drained)
1 can Corn
1 sm can Mushroom stems and pieces (optional)
1 tbsp Basil

Bring to boil and simmer for 45 minutes.

I have V8 in my cupboard that I was going to use for stuffed peppers but never got around to making them so your soup recipe is going to be using it ;D  Thanks for posting a great sounding new soup recipe!

Welcome Vicki.
This was actually a modification of a recipe for Butter Bean Soup I found on here a while back.
Often when I make this I throw in chopped up fresh spinach too, as it adds to the flavor.

Peter... Are you a mind reader?  I have some fresh spinach in my refrig waiting to find its way into something so guess where it's going?  Making V8 soup today!

Wouldn't that be something -- winning Powerball  :shock: .  I wonder how much each member would get when we had to split it by 6100 which is the number of members listed.  Even assuming they are not all active, I think that still would mean some big bucks for each of us.  SOOOOOOOOO, what would you do if you won Powerball?  If I won the pot all by myself, and seeing as how I am retired already, I would give each of my two adult children enough to pay off their bills and buy a house mortgage free and furnish it. Next I would set money aside for college for each of my three granddaughters.  With the rest I would love to travel with my husband until all the remaining money was gone!

P.S.  Made the V8 soup -- delicious and so easy.

Sorry y'all. I tried to get the number but just keep coming up with the statement "The lottery is a tax for people who are really bad at math"! Guess nits back to work on Monday.

Too true! I don't play any of the lotteries because of that fact and also because I really don't like to part with my hard-earned money on something that I can't feel, eat, or wear  ;D

V-8 soup    yum yum  It so good. I made it today with one change I added some shredded cabbage.
