MEDITERRANEAN CRUNCH

1 can garbanzo beans rinsed and drained

1 cucumber chopped

1 cup small broccoli florets

1 cup grape tomatoes halved

1 cup kale, tough stems removed

1/2 cup chopped red onion

2T finely chopped kalamata olives

3T red wine vinegar

1 small garlic clove minced

1T finely chopped parsley

1t chopped fresh thyme

In a large bowl combine all ingredients. Cover and chill for at least 1 hour before serving

Sounds delish, Cameron, but will have to go shopping for several ingredients I dont usually keep on hand.

This sounds great for a take-to-work salad, Cameron! Dump it all in a jar, put it in a cooler, shake it up a few times in the morning -- and voila!  :thumbsup: No lettuce to get "cooked" in the vinegar. The kale should hold up great.

It's on my menu for this week -- or next if I have to get the kale in the big city this weekend. Thank you!
