GREEN BEAN SALAD

I made this for lunch today. It was a new recipe for me and it was so good that I thought I would share.

GREEN BEAN SALAD

1 lb. fresh green beans, trimmed
1 small red onion, sliced
12 cherry tomatoes, halved
12 pitted ripe olives, halved
1/4 cup shredded Parmesan cheese
1/3 cup olive oil
2 tablespoons balsamic vinegar
1 garlic clove, minced
1/2 teaspoon ground mustard
1/2 teaspoon salt
Dash pepper

Place a steamer basket in a large saucepan over 1 inch of water. Place beans in steamer basket; bring water to a boil. Cover and steam 7-8 minutes or until crisp-tender.

In a large bowl, combine beans, onion, tomatoes, olives, and cheese. In a small bowl, combine olive oil, vinegar, garlic, mustard, salt and pepper. Whisk thoroughly then drizzle over salad; toss to coat.

Oh, yum! This looks awesome, Vicki.

Thank you! I missed your creative input with the recipes for a while. I will try this, definitely. I get frozen whole green beans from Schwans home delivery when good, fresh green beans are scarce in the store. They are excellent. I think they'll work perfectly for this.

Looking forward to a new green bean favorite.

I finally got to fix this salad!
I added chopped celery and de-seeded chopped jalepeno.
I think diced cucumber would be great in it also but did not have any.
