Pea Salad

Hi,
I made one of my favorite cold salads yesterday but modified it to fit the program.  It contained:

1/2 of small pkg. frozen peas
1 stalk of celery chopped fine
1/4 C  chopped green pepper
1 hard boiled egg
1 scallion chopped (with my kitchen sizzors)fine
2 or 3 TBLS of Gorgonza cheese

Dressing consisted of  Fat Free Mayonaise, maybe 1 TBLS. FF yogurt, vinegar to taste, 1 pkg. splenda, salt & pepper.

It was very good but missing something.  Mary do you have any ideas?  I omitted the Colby cheese that I used to include (a lot of).  Maybe that's why it tastes a little bland to me? 

Any thoughts out there????

Hi Sweetcheeks,

You can always use the grated Veggie Cheddar.  I'd have to go and compare your recipe to the one that I used to make, but I'm almost certain that mine had mayo in it.

This is the pea salad that is layered, right?

hi..........no it's not the seven layer salad.  It's just one I made up years ago and everyone in the family loves.  I will just have to find that veggie cheese everyone talks about.

Hi sweetcheeks,

I HIGHLY recommend the veggie cheese.  I'm telling you when I tasted it I was amazed!  I was wondering how I was going to live without cheese.  Now I don't have too.  YAY!  I am especially fond of the veggie mozzarella flavor.  It melts beautifully too.  Good luck and keep us posted.
