MINI WALDORF SALADS

3 Green Apples

20 Red Grapes

1 Stalk Celery

Mayo

1/4 C Walnut Pieces (optional)

1t Freshly chopped Parsley

EVOO and s & p

CUT 2 APPLES INTO 8 CUBES EACH, MAKE A HOLE IN THE CENTER OF EACH CUBE WITH A MELON BALLER

CHOP 1 APPLE, GRAPES, CELERY in small even pieces
ADD MAYO, WALNUTS, PARSLEY
SEASON WITH SALT AND PEPPER, MIX

PUT A SPOONFUL OF SALAD ON TOP OF EACH APPLE CUBE AND DRIZZLE WITH EVOO.

Linda, I just copied the recipe out of a magazine, but it did have a photo, and they were so cute. The recipe was from the Ritz Carlton Hotel in Toronto.
Who knew they made something so simple!

Ok, where's the mint..LOL..
I will diffinetly try this. Only with me, I will try the "bean" mayo first... I love the lvavor combo of apples and EVOO.
I am going to display them in the fridge. When I go "grazing" and open the fridge. Wow! I'll say, such pretty little things. I will have to eat one! AND I will!! maybe two or three.

P.S. I purchased orange mint last time I went to Farmers Market. I already have spearment growning.
It's just so wonderful in smoothies. Lots of flavor. The lemon mint is next....

Did a search and cannot find a digital version of the recipe.
Having trouble seeing 1/8 of an apple being big enough to core out with melon baller.
Maybe you could take a picture when you make it.

You need a BIG apple!!

or maybe they mean 4 cubes per apple, 8 total

It might be a cute thing to make for Thanksgiving or Christmas. It is Canadian Thanksgiving this coming weekend, if I try to make them I will let you know! :D

Ok. I'll bite..Is that eating a Canadian Goose as apposed to a American Turkey? I think the Turkey is a "native" of America or at least a close cousin of the one that visited from the Yucatan..
It was almost our National Symbol. Gosh, am I glad they finally picked the Bald Eagle. I can't even imagine eating one of those beauties, but don't know what I would do without my turkey. UGLY RULES!!

I think the pretty apples display is wonderful for the table before, during and after the meal.
We'll have "turned" color leafs all over the ground then. I'll go gather and make a bed just for the plate..
Being...gathering leafs, old tradition, plate of apples, new tradition. Combine and enjoy...
