Fiesta Corn

This makes enough for your Cinco de Mayo fiesta.  I'm giving you the actual proportions I used because it was so pretty.  You will probably want to cut it for everyday use!  Serve warm or cold as a vegetarian main dish, side dish or salad.  I'm posting it in all three places - it's too good to miss!

5 lb. bag Frozen Corn
1 large Vidalia (sweet yellow) onion, diced
3 bell peppers, diced (one green, one red & one orange)
1/2 large head of garlic, (about 8 large cloves) minced
2 Tbsp. EVOO
1 can Dark Red Kidney Beans, rinsed & well drained
1 can Black Beans, rinsed & well drained
2 Tbsp. Emerils' ESSENCE seasoning blend  http://www.letsdolunch.com/boards/index ... pic=4610.0
1 Tbsp. Thyme leaves, plus pinches of rosemary and sage

Sauté diced veggies in EVOO with the seasonings, just until wilted but still firm.  Mix with corn and beans and microwave to heat through.
