Mock-Potato-Salad

1/2 Rutabaga, cut in bitesize pieces
1 spring onion, cut in rings
1/2 Cucumber, with peel, but without seeds, chopped
1 Chili or Piri-Piri, chopped
1 Tbs. winevinegar
1 Tsp. dijonmustard
1 Tbs. Miracle whip balance
Salt & Pepper
1 cup vegetable broth
and if u like:
Tomatoes,garlic, Pickles aso...

Simmer the rutabaga in the broth for about 15-20 min..they should be al dente..
Drain the rutabaga.
Mix up the onion, with the chopped pickles, spices and the chili.
Mix it up with the rutabaga add salt & pepper.
add some garlic, the miracle whip and dijonmustard (you can use more) and all the spices u like to have in a potatosalad.

Let it set in a fridge for some time.
Any fresh herbs on that will taste just fine...

:D I can't wait for my daughter's rutabaga's to get ready... this will be tried as soon as we can pick them...
Thanks for the different recipe for potato salad as this will be one thing I will miss this summer.

I love rutabaga  :inlove:
Can't wait to try it!  I made Fly Lady's Red & Green soup this week.  It calls for turnip, but I used 1/2 of a rutabaga instead.  Now I know what to do with the other half!
