Red & White Kidney Bean Salad

I usually make this for picnic get-togethers and always get raves!

1 can Light Red Kidney Beans
1 can Dark Red Kidney Beans
1 can Cannellini Beans (white kidney beans)
6 stalks of celery, sliced
6 hard cooked eggs, chopped
6 dill pickles, diced
3/4 c. chopped onion or 1 t. onion powder
Mayonnaise or Italian dressing

Drain and rinse all beans.  Combine beans with celery, eggs, pickles, onions or onion powder. Add mayo or Italian dressing to your taste.  Refrigerate a few hours so beans absorb flavor.

Notes: Always use LDL approved dressings.  I use my Italian Dressing Mix (recipe in the Salad message board). This recipe makes a hugh salad, but the longer you keep, the better it is!
