Instead of using the usual sweet potatoes in this salad , switch out to Sweet Dumpling, or Butternut Squash, or any other sweet squash to make it LDL style.
1 medium or two small sweet squashes of your choice.
2 Tbsp LDL, FF, or EVOO mayo.
1 Tbsp Dijon Mustard
½ teaspoon salt
¼ teaspoon coarsely ground pepper
2 large celery stalks coarsely chopped (about ¾ cup)
½ cup thinly sliced red bell pepper
½ cup coarsely chopped fresh pineapple
¼ cup dried cranberries
1 small green onion, thinly sliced (2 tbsp)
Chopped chives for garnish.
Cut squash into quarters, place face down on a platter, and microwave until tender 8-10 minutes. Cool and cut into small chunks.
Meanwhile in large bowel mix mayo, mustard, salt and pepper until blended.
