I know that Sicilian Mama couldn't post her Balsamic dressing recipe because she sells it.....but this is my very favorite balsamic dressing that I made up....ONLY 13 calories per Tablespoon....
It's so rich & good that it doesn't take much dressing per salad
I like to put my salad greens in a plastic baggie...just before serving add a little dressing, close the bag & SHAKE This way you don't have to use much at all and the shaking evenly coats each piece of lettuce
SOMETIMES when I make this....I make 2 batches in separate jars....
The first I use the original recipe..........the 2nd jar I add a little more stevia to sweeten it up for VARIETY...
1 recipe is enough for 8-10 normal size salads

MODENA BALSAMIC LOW CAL DRESSING
1/4 c. balsamic vinegar (organic if possible)
1 T. shoyu, tamari or soy sauce (no sugar)
1 T. water
1 clove garlic, finely minced
1 T. pure Maple Syrup (or 1 T. Agave Necter (low glycemic) or a pinch of pure Stevia powder
2 T. extra virgin olive oil
1 t. crushed red pepper flakes
BLEND EVERYTHING TO EMULSIFY & make a creamy dressing (I use a small Bullet Blender)

Here is my version that I LOVE..
Sweet Balsamic Dressing
1/4 cup balsamic vinegar
1 garlic clove, minced
4 packets of truvia
1/2 tsp of salt
1/2 tsp of gr black pepper
1/2 cup of EVOO
Mix all together,,, enjoy! My hubby LOVES this dressing... I make a simple salad of spring lettuces, cherry toms, purple onions, chick pea's and grapes. I add blue cheese crumbles to my salad. YUMMMMM

I use the same recipe except I increase the EVOO to 3/4 cup, use 1 Tablespoon of finely chopped garlic and leave out the sugar substitute. I like to enjoy the natural sweetness of the balsamic vinegar especially if it's been aged at least 10 years or longer....preferably longer.
