We had a GREAT main dish salad for lunch: romaine mixed with chopped pear(or Fuji apple)and red bell pepper, tossed lightly with blue cheese crumbles and a dab of low cal vinaigrette dressing. Grind black pepper over top. We added a few ounces per serving of cooked chicken chunks.
The recipe also called for sweet toasted walnuts, but we passed on those. A can of drained and rinsed white beans or garbanzo beans might mix in well, though.
