Cauliflower Potato Salad
1 whole fresh cauliflower- cut into pieces - even stems
1/2 chopped med or large onion
4 boiled eggs
hotdog relish - to taste ( I use almost half the jar)
1 Tbs garlic
1/2 c. small diced celery
Light Miracle Whip just to hold together
Boil cauliflower in lightly salted water until tender but not mushy
Drain and cool completely
Add remaining ingred.

RT, If sugar is the problem with the relish, you can get dill relish, and sweet pickles (chop yourself) make without sugar, they use Splenda. When I first started LDL and wanted something sweet, I'd have a couple (can't eat more than a couple) mock sweet pickels. Worked wonders.

I am usually good at checking labels so I don't know how I missed it on the hotdog relish. But just add a bit of yellow mustard with the pickle relish and it should be close the same thing I would think.
