This is from the latest issue of the Canadian Magazine Chatelaine. All the ingredients are on the shopping list in the red book.
Roasted Beets and Grapefruit Salad
1 large bunch of beets (4-5)
1 large grapefruit (preferably red)
2 tbsp red wine vinegar
2 tbsp horseradish
1 tbsp olive oil
2 tsp honey
dash salt
1/4 cup shredded mint or chopped parsley
Preheat oven to 400F
Cut top off beets
Wash beets then wrap (unpeeled) individually in foil
Place on rimmed baking sheet and roast for 60-75 minutes until fork tender
Peel grapefruit and cut into rounds
Mix remaining ingredients except mint/parsley
Unwrap beets and let cool until they can be handled
Slice beets into rounds
Add warm beets and grapefruit to vinegar mixture and toss.
Sprinkle on mint or parsley
