Kiwi Lime Gelatin Salad

I got this from an old Taste Of Home Light & Tasty magazine. 

6 kiwifruit, peeled, sliced and quartered
1 cup dry white wine or diet lemon-lime soda
2 packages (3 ounces each) lime gelatin
3 cups diet lemon-lime soda, chilled
2 tablespoons orange juice
1 can (11 ounce) mandarin oranges, drained

In a saucepan, bring kiwi and wine or diet soda to a boil.  Cook over medium heat for 5 minutes, stirring occasionally.  Add gelatin; stir until dissolved.  Stir in chilled soda and orange juice.  Refrigerate till partially set.  Fold in oranges.  Pour into a 6 cup mold coated with nonstick cooking spray.  Refrigerate until firm about 8 hours or overnight. 

As long as you use sugar free Jell-O and mandarin oranges with Splenda I believe this recipe would be LDL friendly.  I would also use diet soda.

This sounds really good....I think it would be LDL friendly too.  Hope we don't find out otherwise.....I am a big key lime pie fan....or should i say was....the sugar would be sickening to me now....

Mary- I enjoy limeade so much more than lemonade.  Especially if I have Key limes!  Pam

Thanks, Little Mary.....that sounds yummy I will try this!!  I am always looking for different drinks to vary just having water all day.
