Peppered Corn Salad

A great salad to serve with sloppy joes or your favorite hamburger.

1 pkg (16 oz) frozen corn
2 medium tomatoes, seeded and chopped
4 green onions, chopped
1/2 cup chopped green pepper
2 Tbsp. canola oil (can use EVOO)
1 Tbsp. white vinegar
2 tsp. minced fresh parsley
1/2 tsp. salt
1/2 tsp. lemon juice
1/4 tsp. sugar (LDL approved sugar)
1/4 tsp. dried basil
1/8 tsp. crushed red pepper flakes

Prepare corn according to package directions; drain well and set aside.  In a large bowl, combine the tomatoes, onions and green pepper; stir in corn.

In a small bowl, combine the remaining ingredients; pour over salad and toss to coat.  Chill until serving.

I just found this recipe. Sounds good. Just had to help it rise to the top.

Tina,

I must admit I have never make this salad even though I posted it; but, it sounded like a good one for LDL.  If you make it, let me know what you think of it because I am making turkey burgers later this week and will make it if you give it a good grade.
