Tomato Salad -- yummy!

Whisk together:
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar (I used the kind with garlic by Great Value)
3/4 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon black pepper
Add:
4 chopped tomatoes (Although I used 2-3 cups of yellow cherry tomatoes and red grape tomatoes, sliced in halves -- they were delicious)
1 cucumber, peeled and sliced
5 chopped green onions
1/3 cup chopped parsley

Toss together.

I adapted this from a recipe in Prevention magazine.  Today, I added a chopped boiled egg, olives and some grilled chicken and put it over a bed of torn lettuce leaves.  The other time I made it, I had no cucumber, so I added some yellow baby carrots that were in the fridge.  Also, I doubled the recipe, but added 3 tablespoons of the vinegar instead of 2.

Yum!  This sounds really good.  And especially since it is really too hot to cook.  Thanks for posting.  I'm going to try it for dinner.

Crick, I fix  this almost everday  right now.  My dressing is so similar.  My grape tomatoes have taken over my flower beds. LOL. Cukes are plentiful.  I love the garden produce.  I told someone about Butternut squash fries just today.  People just don't know what to do with them.  Don't we have a wide choice of great foods from which we can choose?  LDL is not a boring way of eating.  :D and  *love* JF
