Hi folks!
    Here is a recipe that is our favourite chicken dinner. I saw it in some magazine I don't remember which one but it is so good. I make it often.
                       
          1 pack 20 ounces of skinless chicken breast
          2 tablespoons soy sauce
          1 1/2 teaspoons minced garlic
          1 teaspoon dried parsley (i like fresh better)1/2 teaspoon dried ginger ( i use fresh ginger minced)
          2 tablespoons fine dry bread crumbs Use your favourite bread crumb ldl substitute
          1/2 cup sliced water chestnuts finely chopped
          1/2 cup thinley chopped green onions
          2 tablespoons vegetable oil
         
      FOR THE SAUCE

        1- 8 ounce can crushed pineapple in own juice  2 tsp cornstarch
                                                                        2 tablespoons of parsley chopped
        1/2 cup finely chopped red bell pepper        Stir together all the first chicken Ingredients form into 8 1/2 inch burgers I
                                                                    I make 4 bigger ones. heat the oil fry the chicken for 7-8 min. Until well brown
        1/3 cup your favourite sweetner                set aside and keep warm.      stir all sauce ingredients in sauce heat till thick.                                                            serve burgers with sauce over top.
       
        1/4 cup cidar vinegar
        1 tablespoon soy sauce

Hi folks
    Sorry this recipe seems in bad order. My computer has lost its mind and does exactly what it wants. In the near future I am going to get a new puter and then maybe I can get this recipe down much nicer. I just had this thing in to be fixed and he did all he could and it is not much better. It's four years old so I guess it is on it's last legs.  Thanks for putting up with us.

Try going to the recipe and click Modify and see if you can straighten it up a bit.

YUM, YUM... Being a hamburger nut, this one will make it into my burger recipes  :) . I have a great ground turkey burger.  If I can find it, I'll post.

Chicken and Green Onion Cakes with Chunky Pineapple Sauce
These easy appetizers are elegant enough for a first course or a buffet.

Total Time: 30 Min. - 1 hr.
8 servings


Ingredients

  • 2 tablespoons soy sauce
    1 teaspoon minced garlic
    teaspoon toasted sesame oil
    1 teaspoon dried parsley
    1/2 teaspoon ground ginger
    2 tablespoons dry breadcrumbs crushed popcorn or corn thins
    1/3 cup sliced water chestnuts, finely chopped
    1/4 cup thinly sliced green onions
    2 tablespoons finely chopped fresh cilantro
    (16 ounces) Ground Chicken Breast
    2 tablespoons vegetable oil


FOR THE SAUCE:

  • 1 can (8 ounces) crushed pineapple in juice
    1/2 cup finely chopped red bell pepper
    1/3 cup sugar
    1/4 cup cider vinegar
    1 tablespoon soy sauce
    2 teaspoons cornstarch
    2 tablespoons finely chopped fresh parsley or 1 tsp. dried parsley flakes


Directions
1.Stir together soy sauce, minced garlic, sesame oil, parsley and ginger in a large bowl. Add breadcrumbscrushed popcorn or corn thins, water chestnuts, green onions, cilantro, ground chicken and mix until well blended. Form into 8 (1/2-inch thick) cakes.
2.Heat oil in a large skillet over medium-high heat. Add chicken cakes and cook 6 to 7 minutes, turning half way through cooking, until well browned and thoroughly cooked. Remove from the skillet and keep warm.
3.Mix together crushed pineapple, bell pepper, sugar, vinegar, soy sauce and cornstarch in a small saucepan stirring to dissolve the cornstarch. Bring to a boil over medium-high heat, stirring constantly until thickened and glossy. Reduce heat to low and simmer for 2 minutes stirring frequently. Stir in parsley.
4.Serve chicken cakes topped with the sauce.



Tips
To keep meat from glomming on to your hands, wet them in cold water first (repeat as needed).


Substitutions/Variations
Add some crushed hot red pepper flakes to the sauce for a spicier version.
