Lentils
Please tell me tha lentils are okay to eat they have been cooking all night in the crockpot.

Lots of members cook their beans in a crockpot. I don't see any reason that lentils wouldn't be fine (maybe a little mushy) if they cooked overnight. I love lentils. Pam

Lentils are a wonderful part of Let's Do Lunch, Dar! An absolute favorite of mine, too. Look on the recipe boards for some delicious recipes. The Greek Lentil Soup from Niki is one of my all-time favorites. Lentils make a great chili, too.
Of all the legumes, lentils are also least likely to give you an unwelcome attack of gas. So especially as you're getting your Let's Do Lunch feet under you and getting used to this new way of eating, and your body is getting used to all this wonderful fiber you're feeding it, lentils are a great choice.
