Here’s a recipe I found in my most recent Better Homes and Gardens magazine that I thought would be perfect for LDL:
ROASTED VEGETABLES AND CHICKPEAS
1 lb. carrots, peeled and cut into 2 inch slices
1 lb. sweet potatoes, peeled and cut into chunks
1 large red onion, peeled, halved and cut into 1 inch wedges
6 cloves garlic, minced
1 16 oz. can chickpeas (garbanzo beans), rinsed and drained
2 to 3 T. olive oil
1 t. dried rosemary, crushed
1 t. brown sugar (I would omit this)
½ t. sea salt
½ t. fresh ground black pepper
Preheat oven to 425 degrees. Place all veggies in shallow roasting pan and cover with oil and seasonings and toss well. Roast uncovered 45 minutes, or until veggies are lightly browned and tender, stirring twice. Makes 8 servings, 223 calories , 4 grams of fat, 7 grams of fiber, 6 grams of protein.

Hummmmm,
I have everything on hand except fresh carrots, I have a can of canned and some frozen.
Thinking about trying this today!
