SOY CURRY
This is what I call an ‘English’ curry, made using curry powder and containing apple and plump golden raisins, rather than authentic Indian spices. I love it with some cooked cauliflower (or Cauliflower ‘mash’, if you like it – I do) or even with a side of crisp salad leaves. It's really tasty and filling. Hope you enjoy it.
1 yellow onion, chopped
1 tablespoon olive oil
1 tablespoon curry powder
1 sweet apple, peeled, cored and chopped
1 tomato, chopped
2 cups cooked drained soy beans or 2 cans, drained
1 cup water
Salt and pepper
Fry the onion in the olive oil in a large saucepan until tender – 10 minutes.
Add the curry powder, stir over the heat for a few seconds, then add the apple and tomato. Cook, covered, for about 5 minutes,. Until the apple is soft.
Put in the soy beans, water and some salt and pepper. Simmer, without a lid, for about 5 minutes, to heat through, and slightly thicken the sauce.
It’s nice hot or cold!

I'm so glad, Mary -- that's great to know. I do think that the combination of the soy beans and the sweet raisins and apple is good...
