Pork Loin, Sweet Potato and Apple Baker
2 Pork Loin w/ bone
2 granny smith apples
2 sweet potato
1 tsp cinnamon
1 Tbs olive oil
Instructions:
Put olive oil in fry pan and seer pork loins w/bone. When brown on both sides add peeled, diced apples and cover for 8 minutes.
Put peeled diced sweet potato on stove and boil until partially soft.
Use oblong glass dish to put meat and apples into it. Sprinkle with cinnamon and then add sweet potatos.
Cover with foil and bake for 1 hr on 350.

I made this last night so my husband could take some to work. He ended up eating one loin with topping so I ate a couple bites. It is wonderful, the cinnamon adds a great addition to the flavors
