CHICKEN WITH ROASTED SWEET POTATO SALAD

2 Sweet Potatoes peeled and sliced into thin wedges
1 Red Onion Thinly sliced
3T EVOO
Kosher Salt and Pepper
4 Boneless Chicken Breasts
4 Cups Spinach, thick stems removed
2T Fresh Lime Juice


Heat Oven to 425
On Baking Sheet toss potato, onion, 2T Evoo, salt and pepper
Roast until tender, about 25 min

Meanwhile heat 1T Evoo in skillet over medium heat
Season chicken with salt and pepper and cook both sides until browned and cooked through

In a large bowl toss warm potato mixture with spinach and lime juice, and serve with chicken

Cameron,

I made this for lunch today and just had to tell you how delicious it was and how easy to make.  I did alter it somewhat because I made it to serve two people.  Thus, 1 medium sweet potato, 2 small chicken breasts (I pounded them about 1/2 inch thick), 1/2 bag baby spinach, and juice from 1/2 of a fresh lime.  This recipe goes into my LDL cookbook to make again.
