Saw this on FB today and could see how to make it LDL friendly:

"Real Taco Pie"

Ingredients:
1/4 cup butter
⅔ cup milk
  Not needed when using pureed beans instead of instant potatoes

1 pkg.taco seasoning mix (1¼ oz.)
2½ cups mashed potato flakes Probably 2 cans of Canellini or butter beans - pureed
1 lb. ground beef
½ cup chopped onion
½ cup barbecue sauce
1 cup shredded lettuce
1 medium tomato, chopped
1 cup sharp cheddar, shredded (4oz.)
sour cream, optional

Directions:
1. Preheat oven to 350°F.  In a medium sauce pan,melt butter. Add milk and 2 Tbsps. of taco seasoning mix.
Remove from heat and stir in potato flakes until incorporated.

Puree butter or Canellini beans and add 2 TBSP Taco seasoning. Press mixture over bottom of 10" pan.

2. In a medium skillet, cook beef and onions until beef is browned and onions are tender. Drain off fat and stir in remaining taco mix and barbecue sauce. Cook while stirring until bubbly, then pour into prepared potato bean crust.

3. Bake uncovered in oven for 30-35 minutes. Let cool for 5 minutes, and then top with cheddar cheese, lettuce, and tomatoes. Cut into squares and serve with sour cream.

Thanks Linda,

Especially like the crust recipe.  Could be used for sweet or savoury. Yet another winner!

Michele- I used to order the Corn Thins online, but now my local grocery store orders them for me by the case.  It saves on shipping.  We only use the "Original" Corn Thins as the other flavors have seeds and other not-recommended ingredients.  They are wonderful for dips, sandwiches, and snacks.  Crunchy and delicious.  The only ingredients are popcorn (not GMO) and a little oil from the manufacturing process- they are popped into molds in Australia.

And tortillas are not "legal" on this plan....corn or wheat.
Tortillas use processed grains and are not good for weight loss and will stimulate cravings.
