Upside down Pizza

Ingredients
2 teaspoons olive oil
1 pound lean ground beef or turkey
1/4 cup turkey pepperoni (non LDL, contains some sugar in processing)
1 cup onion, sliced
8 ounces mushrooms, sliced
1 Zucchini squash thinly sliced
2 cups pasta sauce LDL style (left over spaghetti sauce)
1/2 cup black olives, sliced
5 ounces low fat mozzarella cheese, shredded
2 eggs
3 cups garbanzo beans pureed
1/2 teaspoon salt or as needed, (I cook my beans without salt)
1/4 cup Parmesan, grated
Thin with water as needed, should be like a thick batter

Directions (Preheat oven to 400 degrees F.)

Heat oil in large skillet over medium heat. Add meat and cook for 3 minutes, or until browned and
cooked through, breaking up the meat as it cooks with a wooden spoon. Add onion and mushrooms and
cook 2 minutes, until soft. Add pasta sauce and olives and bring to a simmer, about
2 minutes. Remove from heat and transfer sauce to the bottom of a 13 by 9-inch baking dish. Sprinkle top with
mozzarella cheese.

In a medium bowl or blender, puree beans and add eggs, salt and Parmesan cheese until blended. Thin with water as needed, should be like a thick batter. Pour mixture over sauce in pan. Bake 25 minutes, or until golden brown. Let stand for 5 to 10 minutes before
slicing and serving.

I am going to make this next week, I have really been craving pizza. I suppose I always will as I associate it with going to eat after my HS football games. That was the first time I ever tasted pizza.

I adjusted the recipe a little. It was great. Only one problem - I like it too much. I should have had it for a lunch meal instead of dinner, but I had no meat at lunch. That would have given me more time to work it off. DH had some of the gingerbread brownies with cool whip, but every night till it's gone is not an occasional treat!! :( Will go to bed early tonight, as I have a big day planned tomorrow. Bon Appetite!!
