I've made a version of this for a long time -- even before starting LDL, because I have a good friend with celiac. We didn't have a grill, but I sliced the zucchini into thin, lengthwise strips, then baked them in the oven until they started to brown, turned them over, and did the same on the 2nd side. It really helps to make the dish less soupy and more lasagna-like to get rid of that extra moisture, because zucchini is mostly water. Also works great with yellow crookneck.

I have it in the oven right now! Can't wait to try it. I did use a grill pan and grilled the zucchini.
