Balsamic glazed chicken with pearl onions

Balsamic glazed chicken with pearl onions
2 skinless, boneless,chicken breasts, halved
1/2 lb frozen pearl or small white onions, thawed
1 green or red bell pepper
2 garlic cloves, minced
1 tbsp fresh rosemary, chopped, or 1 tsp dried
1/3 cup balsamic vinegar
1/4 cup chicken broth
1/4 c. light golden raisins
1 bay leaf
2 tsp olive oil
½ tsp salt
½ tsp black pepper, freshly ground
Directions
Preheat oven to 400°F.
Cut bell pepper into 1" pieces.
In shallow roasting pan, arrange chicken, onions and bell pepper.
Sprinkle garlic and rosemary on top.
In a small bowl, whisk together balsamic vinegar, broth, olive oil, salt and pepper, and pour over the chicken and vegetables.
Add bay leaf and raisins to the pan
Bake uncovered 40 minutes, or until the chicken is cooked through.
Add more broth to keep the pan from burning

My kind of recipe! Have printed it out but don't see where the raisins are used.

No, your eyes are just fine, I edited the recipe, just like I edit my menus. I write what I plan to eat, then if I change or add something I edit it !! It keeps me accountable. I did not gain any weight on my vacation although my weight fluctuates 2-4lbs. I should weigh only once a month, but once a week is hard for me. I am addicted to weighing. However I take BP meds and I need to keep a little closer eye on my fluid weight. I have cut back on the water pills. I don't have acid reflux any more so I no longer take Nexium. My blood sugars are staying down so maybe the next cut will be the diabetes meds. I think we have similar taste VickiLynn. Would you share some of your favorite recipes? I'm working my way down to overweight and don't mind being a loser! L-) Aloha, Leilani
