Cajun Pressed Chicken

Cajun Pressed Chicken

1 tsp. coconut oil
2 skinless, boneless breasts
Your favorite cajun seasoning
Smokey paprika

Heat the EVCO in a non-stick pan. Rub the seasoning into the breasts, and place them in the hot skillet.
Place a pie pan on the chicken and put a brick or weight on it. I fill my teapot with water and place it on
the pie pan. This presses the chicken down and gives it a browned crust. Fry for about 4 min. then turn it over
and press it as well. Cook it about 4-5 min. Check for doneness. Salt it as needed. Enjoy!

Omi, THANK YOU! perfect timing. I was going to have leftovers from yesterday for lunch. Now, I am going to put that chicken breast to cajun cooking today. I finally bought coconut oil at the store..YEAH! one thing I can cross off my TO DO List :o) Better watch this one. DH will end up loving it and I won't have any left overs...guess I will just have to share.. :ymhug:
by the way..you do look like paula Dean, especially with your new hair cut. I love her too!
