Chicken & Asparagus bundles

CHICKEN & ASPARAGUS BUNDLES!!!

Ingredients:
4 chicken cutlets, pounded thin and evenly
1 bunch of asparagus
1 tsp. olive oil
part-skim mozzarella cheese (optional)
non-stick cooking spray
salt and pepper, for seasoning meat
Rye crisp or corn thin crumbs

Directions:
Sautee asparagus in olive oil until bright green. Set aside.
Preheat oven to 375 degrees. Spray a baking dish with non-stick cooking spray or cover it with parchment.
Pat chicken dry and lightly season with salt and pepper. Lay out chicken breast, arrange asparagus on top, and sprinkle with mozzarella.
Roll chicken around asparagus and cheese; place seam down in baking dish. You may have to tie a string around it to hold while cooking.
Repeat with remaining chicken breasts.
Sprinkle crumbs on top of chicken. Cook for approximately 10 minutes* or until chicken registers 160/165 degrees with a meat thermometer

What a great recipe! Asparagus is my favorite veggie so I am definitely going to make this after buying some fresh asparagus today at the grocery store. Plus, as Little Mary says, "easy peasie" for recipes that take just a few minutes to make and taste delicious.

This dish was awesome! I made it this past Sunday and my "husband" test passed with flying colors; making it into my LDL recipe binder as a 5 star, make again meal.

I just had to bring this recipe to the top again! I had marked it "fantastic" after the first time I tried the recipe. It surely passes the fantastic test as I made it again this past weekend. Try it, you'll love it!
